Fruit-forward and winey, this coffee showcases its processing in all the best ways. The previously mentioned sangria note is unmistakable, and it is complimented by fruit notes like raspberry and orange. The cup is intensified by a smooth richness reminiscent of dark chocolate.
The coffee cherries are handpicked at peak ripeness and then fermented in an anaerobic environment for forty hours. After fermentation, they are removed to lounge in the sun until optimal moisture content is achieved.
